Farming Upwards

On the outskirts of many large cities, a new kind of farm is taking shape — one that grows upwards rather than outwards. Inside windowless warehouses, leafy greens are stacked in trays from floor to ceiling, tended not by tractors but by sensors, pumps, and banks of coloured lights. Advocates call it vertical farming, and they argue it could reshape how cities feed themselves.

The appeal is easy to grasp. By stacking crops in layers, a vertical farm can produce many times more food per square metre of ground than a field can. Most systems dispense with soil altogether: plants sit in trays with their roots bathed in a nutrient-rich solution, a technique that uses up to ninety-five per cent less water than conventional irrigation, since almost nothing is lost to evaporation or drainage. Because the farms are enclosed, pests are largely excluded, and harvests do not depend on the weather. Crops can be grown beside the supermarkets that sell them, cutting the long journeys that leave ordinary salad leaves wilting in transit.

Yet the model carries a heavy cost, and it is paid largely in electricity. Plants need light to photosynthesise, and a sealed building has no sun. Vertical farms therefore rely on powerful LED lamps that must burn for much of the day, and this lighting accounts for the largest share of their running costs. Where electricity is generated by burning fossil fuels, the environmental savings on water and land can be cancelled out by the carbon released at the power station.

These economics explain why vertical farms have so far concentrated on a narrow menu. Lettuce, herbs, and other fast-growing leafy crops are light, delicate, and command high prices, so they repay the expense of indoor production. Staple crops such as wheat and rice, by contrast, are cheap, bulky, and hungry for light; growing them in towers makes little economic sense with today’s technology. For the foreseeable future, then, the vertical farm is likely to remain a specialist supplier rather than a wholesale replacement for the field — a complement to traditional agriculture, filling particular gaps rather than overturning the whole system.
